Mini Protein Blueberry Muffins
Ingredients
- 1 scoop vanilla protein powder
- 3 tbsp coconut flour
- 1 tbsp coconut oil
- ½ tsp of vanilla extract
- 3 tbsp egg whites
- ½ tsp of baking powder
- ½ tsp of vanilla extract
- ¼ cup of blueberries
Directions
- Combine protein powder, coconut flour, coconut oil, and vanilla extract, in your mixing bowl. Add in a little bit of water at a time for ingredients to become doughy.
- Stir in baking powder and egg whites. You can add in a little more water here if you want the less thick batter, but be careful not to make it too runny.
- Add in blueberries and lightly stir.
- Spray muffin tin and spoon batter into the tin. Fill about a third full.
- Cook for 7 to 8 minutes. Remember, protein is susceptible to over baking, so watch your muffins closely.
