Mini Protein Blueberry Muffins

Easy, just watch your muffins when baking because protein powder can easily be overbaked

Ingredients

  • 1 scoop vanilla protein powder 
  • 3 tbsp coconut flour
  • 1 tbsp coconut oil 
  • ½ tsp of vanilla extract 
  • 3 tbsp egg whites
  • ½ tsp of baking powder
  • ½ tsp of vanilla extract 
  • ¼ cup of blueberries

Directions

  1. Combine protein powder, coconut flour, coconut oil, and vanilla extract, in your mixing bowl. Add in a little bit of water at a time for ingredients to become doughy.
  2. Stir in baking powder and egg whites. You can add in a little more water here if you want the less thick batter, but be careful not to make it too runny.
  3. Add in blueberries and lightly stir. 
  4. Spray muffin tin and spoon batter into the tin. Fill about a third full. 
  5. Cook for 7 to 8 minutes. Remember, protein is susceptible to over baking, so watch your muffins closely.
